Mi Abuela's Curtida INGREDIENTS:

  • 1 red onion, thinly sliced
  • 3 roma (plum) tomatoes, diced
  • 3 tablespoons cilantro
  • 3 tablespoons white vinegar
  • 1 tablespoon sugar
  • 1 teaspoon pepper
  • 1 pinch salt

Mi Abuela's Curtida DIRECTIONS:

  1. Combine the onion, tomatoes, and cilantro in a non-metal bowl. Whisk together the vinegar, sugar, pepper and salt; pour over the onion mixture, and toss to coat. Cover and refrigerate 2 to 4 hours. Drain right before serving.
