Lawry's Chilaquiles

INGREDIENTS:

  • 1 tablespoon oil
  • 1 medium onion, chopped
  • 1 (1 ounce) package Lawry's® Taco Spices & Seasonings
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 (4 ounce) can diced green chilies, undrained (optional)
  • 6 ounces plain tortilla chips, gently broken
  • 2 cups shredded Monterey Jack cheese
  • 1 cup sour cream
  • 1/2 cup shredded Cheddar cheese

DIRECTIONS:

  1. Preheat oven to 350 degrees F.
  2. In 12-inch skillet, heat oil over medium-high heat and cook onion, stirring occasionally, 3 minutes or until tender. Stir in Lawry's® Taco Spices & Seasonings, tomatoes and chilies. Bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 5 minutes.
  3. In deep 2-1/2-quart casserole sprayed with nonstick cooking spray, arrange 1/2 of the chips, tomato mixture and Monterey Jack cheese; repeat layers. Bake 25 minutes. Top with sour cream, then sprinkle with cheddar cheese. Bake an additional 10 minutes or until cheese is melted. Let stand 10 minutes before serving. Garnish, if desired, with chopped green onions.
