Speedy Vegetable Toss Recipe

Speedy Vegetable Toss INGREDIENTS:

  • 1 pound fresh green beans, ends trimmed, cut into thirds
  • 2 teaspoons Morton® Coarse Kosher Salt, divided
  • 3 medium Italian plum tomatoes, coarsely chopped
  • 2 tablespoons olive oil or vegetable oil
  • 1 teaspoon balsamic vinegar
  • 1/4 cup snipped fresh basil leaves
  • 2 tablespoons crumbled feta cheese

Speedy Vegetable Toss DIRECTIONS:

  1. Cook green beans in boiling water with 1 teaspoon Morton® Kosher Salt for 5 minutes; drain.
  2. In large bowl combine tomatoes, remaining 1 teaspoon Morton® Kosher Salt, oil, vinegar, basil and feta cheese. Stir in hot beans and toss to coat evenly. Serve immediately or at room temperature.


Tip:

Herbed feta, Asiago, or blue cheese can be substituted for feta cheese. Kalamata olives or sundried tomato bits can be added.
