Veggie Delight



"Enjoy your veggies and the crispy crunch of Quaker® Butter Popped Corn Rice Cakes!"

INGREDIENTS:

  • 1/2 cup 1% low-fat cottage cheese
  • 1 medium tomato, thinly sliced
  • 2 tablespoons shredded carrot
  • 1 1/2 teaspoons chopped chives or green onions
  • 1/4 teaspoon dried basil
  • Paprika (optional)
  • 4 Quaker® Butter Popped Corn Rice Cakes

DIRECTIONS:

  1. Place 2 or 3 slices of tomato on each Butter Popped Corn Rice Cake.
  2. Combine cottage cheese, carrot, chives and basil and mix lightly.
  3. Top tomato slices with cottage cheese mixture.
  4. Garnish with paprika, if desired.
