Macaroon Oatmeal Cookies



"Replace solid fats with canola oil in baked goods and you'll cut total fat as well as trans and saturated fats."

INGREDIENTS:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups quick-cooking rolled oats
  • 1/2 cup maraschino cherries, chopped
  • 1/4 cup shredded coconut
  • 1/2 cup canola oil
  • 1 egg, beaten
  • 1 1/4 cups 1% milk
  • 1 teaspoon almond extract

DIRECTIONS:

  1. Preheat oven to 400 degrees F.
  2. In a bowl, sift together flour, sugar, baking powder, cinnamon and salt. Add rolled oats, cherries and coconut; mix thoroughly.
  3. Add canola oil, beaten egg, milk and almond extract. Stir until well blended.
  4. Drop by the teaspoon full on an ungreased sheet. Bake 10 to 12 minutes.
