Spinach Salad with Citrus Vinaigrette INGREDIENTS:
- 1 (10 ounce) bag fresh spinach, stems removed
- 1/2 red onion, thinly sliced
- 1 1/2 cups mushrooms, sliced
- 1/4 cup bacon, cooked to crisp

- Citrus Vinaigrette:
- 1/2 cup orange juice
- 1/4 cup canola oil
- 1 garlic clove, minced
- 2 tablespoons granulated sugar
- 1 tablespoon white vinegar
- fresh ground pepper

Spinach Salad with Citrus Vinaigrette DIRECTIONS:
- Prepare spinach in large salad bowl; mix in onion, mushrooms and bacon.
- To prepare vinaigrette, mix orange juice, canola oil, garlic, sugar, and vinegar. Pour vinaigrette on salad and lightly toss. Add fresh ground pepper to taste.
