Sunshine Cake Recipe

"This is a family favorite - a plain teatime cake."
Original recipe yield: 1 tube cake.

Sunshine Cake INGREDIENTS:
- 5 eggs
- 1 cup white sugar
- 5 tablespoons boiling water
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon lemon extract
- 1 teaspoon vanilla extract

Sunshine Cake DIRECTIONS:
- Separate eggs. Sift the flour, baking powder, and salt together three times.
- In a large mixing bowl, beat yolks until lemon coloured. Add sugar a little at a time. Add the boiling water and the flour mixture. Whip the egg whites to soft peaks, and fold into the batter.
- Pour the batter into an ungreased tube pan. Bake at 350 degrees F ( 175 degrees C) for 45 to 50 minutes. Remove the cake from the oven, and invert the pan over a bottle. Cool and remove from pan.
